Non-Menthol Cooling Agents: WS-3, WS-5 and WS-23 Compared
Menthol is an excellent cooling agent with one limitation that cannot be formulated away: it tastes strongly of mint. Wherever a product needs a cooling sensation without a mint character — a citrus beverage, a neutral skin cream, a fruit-flavoured gum — the physiological cooling agents exist to solve exactly that problem.
How they work
These compounds act on the same cold-sensing receptors that menthol triggers, but carry little or no odour of their own. The practical consequence is that cooling becomes an independent formulation variable rather than something bundled with a flavour decision.
The commercial options
- WS-3 (CAS 39711-79-0) — a carboxamide with a fast, clean onset and moderate duration. Widely used in oral care and gum where an immediate cooling hit is wanted.
- WS-5 (CAS 68489-14-5) — more potent than WS-3, with a longer-lasting effect, typically used at lower dose.
- WS-23 (CAS 51115-67-4) — the workhorse where flavour neutrality matters most. Essentially odourless and without the bitterness that limits some cooling compounds, which is why it dominates in beverages and fruit-flavoured applications.
- Menthyl lactate (CAS 59259-38-0) — a gentler, longer, softer cooling with a mild menthol relationship. Common in skin care, where a sharp cooling onset would read as harsh.
Choosing between them
The three questions that decide it are onset, duration and flavour impact. A chewing gum usually wants a fast onset that persists through the chew, which often means a blend rather than a single agent. A beverage wants no flavour interference at all, which points to WS-23. A body lotion wants a slow, soft, long cooling, which points to menthyl lactate. Blending across the series is normal practice, not a compromise.
Dosing and regulatory notes
These are high-impact materials used at low inclusion rates, and overdosing produces an effect users describe as unpleasant rather than refreshing. Confirm the permitted use levels for your market and application before scaling a trial formulation. Gem Aromatics manufactures WS-3, WS-5 and WS-23 under the GEMCOOL brand alongside menthyl lactate, so a formulator can trial across the series against a single specification format and one set of documentation.
Where menthol still wins
None of this displaces menthol where the mint note is wanted. The WS series is not a cheaper menthol substitute; it is a different tool for the case where cooling and flavour need to be decoupled.
